Other than watching RPGs when I'm not playing them, there are a few games that I just can't get enough of to watch as well as to play. Whether it be speedruns, first playthroughs, quick overviews or whatever, I find myself fascinated by how people approach and play these games:
Soulsborne series MGSV Old DOOM on Ultraviolence difficulty level Hard platformers old and new like Super Meat Boy, Volgarr the Viking, Ninja Gaiden, Castlevania, etc. Watching people complete very hard Mario Maker levels was a treat when that game came out. Recently: PLAYERUNKNOWN's Battlegrounds
So basically games that require a high degree of situational awareness; skill-driven, on the fly tactical thinking; and fluid/responsive intuitive gameplay (granted, PUBG is alpha-rough and from janky milsim roots).
What are your favorites?
edit: new Hitman is pretty great to watch.

Old Dos games, Ultima, Commander Keen and such.
Otherwise, random games, certain FPS's like Team Fortress 2, Fistful of Frags.
